Vegetable cooking spray
1 egg beaten
3 / 4 cup uncooked long grain white rice
1 3 / 4 cups Swanson ® Chicken Broth (regular, goodness or natural certified organic)
1 Tbsp. soy sauce
1 / 2 c. tea. garlic powder
1 / 4 cup tea. ground ginger
1 medium carrot, sliced (about 1 / 2 cup)
2 green onions, cut into thick slices (about 1 / 4 cup)
1 / 2 cup frozen peas
Directions
1. Spray a nonstick skillet 10 inches with a vegetable cooking spray and heat for 1 minute over medium heat. Add egg and cook until it is resolved. Remove the egg from the pan.
2. Remove the pan from the heat and spray with cooking spray. Add rice and cook until it is browned, stirring often.
3. Stir in broth, soy, garlic, ginger and carrots in a saucepan and bring to a boil. Reduce heat to low. Cover and cook for 15 minutes. Stir in onions and peas in a pan. Cook 5 minutes or until tender. Stir in chicken and heat through.
