Ingredients
- Salt
- Tortillas - optional
- Cilantro - optional
- Olive oil or bacon fat
- 1/3 cup chopped onions (green, red, or yellow onions) optional
- 1/4 lb of Mexican chorizo sausage, removed from sausage casing
- 3 Tbsp raisins - soaked in hot water for 15 minutes and drained
- 5 to 6 eggs
Chorizo sausage from Whole Foods. Whole Foods has a standard recipe and spices for making chorizo sausage and may make some up for you upon request if you don't see it displayed.
Directions
1 Heat a large skillet over medium-high heat. Heat a tablespoon of olive oil or bacon fat in skillet. Add chopped onions (optional) and cook until tender. Once softened, the expenditure side of the pan and add chunks of sausage in the pan. Use a wooden spoon to break up chunks of sausage. Add raisins. Stir until sausage is cooked, but not necessarily gold. If you do not lean sausage, drain excess fat from the pan before proceeding. If you do not lean sausage, you can cook the sausage first drain excess fat, then remove to a plate while cooking the onion in the remaining fat. In general, cooking with chorizo lean, fat, that excess is not a problem.
2 rack the eggs one at a time, into skillet. Break the egg yolks and mix the eggs into the sausage. Add a thin layer of salt. Stir constantly until eggs begin to set but still wet. Remove from heat.
Serve immediately with a side of warm corn tortillas and cilantro for garnish.
Serves 2-3.
