Ingredients
1 (14-ounce) package sweetened flaked coconut
1/2 teaspoon coconut extract
1 (14-ounce) can sweetened condensed milk
1/4 cup unsalted butter
4 large egg yolks, lightly beaten
Directions
1.In a medium saucepan, bring the evaporated milk and butter to a boil over medium-high heat. Remove from heat. Pour about 1 / 2 cup of milk mixture into yolks, whisking constantly. Add yolk mixture saucepan, whisking to blend. Add the coconut and extract, stirring. Cover and refrigerate for 1 hour.
Servings: approximately 4 cups
