Egg Salad Sandwich

Ingredients

  • 1 hard-boiled* egg (large), peeled and chopped
  • 1-2 Tbsp mayonnaise (to taste)
  • 2 Tbsp chopped celery
  • 1 leaf of lettuce
  • 2 slices dark rye bread, toasted
  • 1 Tbsp chopped green onion
  • Curry powder (to taste)
  • Salt and pepper (to taste)
* To make hard boiled eggs, place a few eggs in a saucepan, cover with at least one inch of water, preferably 2 inches. Add half a teaspoon of vinegar and salt water (if the shells crack during boiling, the vinegar will help keep the egg in the shell). Cover pan and bring water to boil. Once the water starts to boil, remove from heat and let stand covered for 12 minutes. Drain water from pan, add cold water to cool the eggs, let stand a few minutes.
Directions

1 Mash Up chopped eggs lightly with a fork. Mix chopped boiled eggs, mayonnaise, celery and onions. Sprinkle with powdered salt and pepper and curry powder to taste. Mix with a spoon.

Toast two slices of bread. Place layer of lettuce, a slice of toast, spread the egg mixture over the lettuce, put another slice of toasted bread on top.

Make a sandwich.
